Ho! Ho! Merry Christmas!  I can’t believe how close to Christmas it is already.  Christmas is such a busy time of year, the last thing you need is to add more things to your to-do list.  That’s why these easy Christmas cupcakes are nice and quick to make.  It’s a perfect activity to do with the kids over the holidays when they’re bored.  They taste delicious and they are so cute.  And if you want to cheat, buy the frosting, then they will be absolutely no hassle at all to make.  Although, I have to say, my frosting recipe is so easy to make, you just throw everything into a bowl and beat it for five minutes.  That’s probably quicker than you can find your coat and your car keys to go down to the shops to buy some!

How to make these easy Christmas cupcakes

How to make the frosting:

  1. Make the frosting by beating all the ingredients together on medium for about 5 minutes or until it holds it shape.  It should be the consistency of whipped double cream.

Santa cupcakes:

  1. Spread the frosting over the top of the cupcakes.  Put a thick layer on so it is not see through.
  2. Pour the red glitter over one third of the cupcake to make Santa’s hat.
  3. Add the candy eyes and the red skittle nose.
  4. Cut some marshmallows in half.  Use some to roll them to make an oval shape and put them on the bottom edge of the red glitter to make the “fur” on Santa’s hat.  Use the rest for Santa’s beard and the bauble on Santa’s hat

Snowman cupcakes:

  1. Complete step 1 of the Santa cupcakes.
  2. Pour the hundreds and thousands sprinkles  over one third of the cupcake to make the snowman’s hat.
  3. Use chocolate chips for the snowman’s eyes and smile.  For the snowman’s nose use orange jelly bean .
  4. Use a marshmallow for the bauble on the snowman’s hat.

And that’s it!  These easy Christmas cupcakes are actually really fun to make.  We sat around and made them while watching Home Alone.  It was really Christmassy!
